Berry Pound Cake Recipe


This is what remains of a Berry Cornmeal Pound Cake I made this weekend.  It was delicious!  Here is the recipe.

Ingredients:
1 cup unsalted butter
1 1/4 cup all purpose flour + more for baking pan
1/2 cup fine ground cornmeal
1 cup sugar
1 tsp. vanilla extract
5 eggs (room temp)
1/2 tsp. salt
2 cups of berries (I used a cup of blueberries and a cup of raspberries)

What to do:
Preheat oven to 350.  Butter loaf pan and sprinkle with flour.  Mix butter and sugar, and beat with electric mixer for several minutes.  Add vanilla and eggs and beat well, scraping the sides as you need.  Slowly add salt, flour and cornmeal.  Mix ingredients well.  Stir in berries and transfer to loaf pan.  Bake until toothpick comes out with nothing more than moist crumbs.  Remove from pan and cool on wire rack.
