Pao de Queijo

Recently, I have been experimenting with a few recipes in order to make a Brazilian cheese bread. There are lots of recipes on the world wide web, but today I tried a very simple recipe that I mixed in my blender and poured into a muffin tin. That's right no kneading...

These turned out more like a puff than a bread, and had a very cheesy inner texture, but the flavor was great. I would recommend these for a snack. Did I mention they are gluten free.

Recipe:
1 egg
1/4 cup canola oil
1/2 - 1 tsp. salt (I used 3/4 tsp.)
1 cup tapioca flour (You can see the brand I used in top pic, I found this in Murphy, NC so you shouldn't have a problem wherever you may live)
1/3 cup plain yogurt
1/2 cup water
Note: instead of water and yogurt you could substitute for 3/4 cup of milk. Like I said I'm still experimenting.

Mix above ingredients in mixer then add 1 cup of cheese and pulsate till mixed in. I used 1/2 cup of Parmesan and 1/2 cup of Mozzarella. I also tried sharp cheddar in one batch. With a recipe this simple and quick I'm planning on trying a few different cheeses.

After you have everything mixed slowly pour mixture into a mini muffin pan. I probably filled the tin about 3/4 full.

Put into 400 degree oven for 15-20 minutes, or until very light golden brown.

Pav really liked the ones made with yogurt, he said they tasted authentic.
